Ingredients:
- 1 Large Onion
- 4 Cloves Garlic crushed
- 1 Red Pepper chopped
- 2 Chorizo Sausage Links sliced
- 75ml Oil
- 2 Can Diced Tomatoes
- 1 teaspoon Smoked paprika
- 500g Dry Penne (or pasta of choice)
- 1tsp Salt
Instructions:
- Add the oil to a large saucepan, and fry the onion, garlic, pepper and chorizo slices in the pan. Stir often. If necessary, add more oil to the pan.
- Add the crushed tomatoes.
- Stir in paprika and cook on medium-low for 10 minutes. Be careful not to burn the sauce.
- While the sauce is simmering, cook the pasta until al dente +/- about 10-15 minutes.
- Drain the pasta immediately add the pasta to pan and mix it together with the sauce.
