Hearty Eisbein


  • 2 1kg Eisbein (pork shank)
  • 3 cups of water
  • 1 tbs crushed garlic
  • 3 whole bay leaves
  • 2 onions chopped
  • 1 tsp pepper
  • 2 tsp salt


  1. Place shanks in large stock pot with all ingredients and bring to boil

  2. Reduce the heat, and cook +/- 1 hour till shanks are soft (but must not fall off bone)

  3. Remove shanks and place on baking tray in oven.

  4. Grill the skin of the shanks until dark and crispy, and turn regularly for even distribution. Be careful not to burn skin or handle meat too much to prevent it from falling apart
